I am tired of the cold weather!

Felt good to sleep late this morning.

Breakfast: Black coffee, scrambled eggs, strawberries, peach, avocado. Tomorrow I'm going to break from the usual and try the banana flaxseed pancakes.

Had a Larabar on the run midday.

Late lunch: Turkey, 1/2 apple, mac nuts

Did a modified version of the WOD at home. Had to skip the ball slams because I had nothing to slam. 3 rounds for time: 15 thrusters at 35 pounds, 15 burpees, 75 singles. There is something cruel about thrusters the day after weighted lunges. Labored through in 13:50. Did the 100 KTE that I forgot last night, 8:24.

Dinner: Made the coconut chicken again tonight, very good! Had asparagus with it.

I tried making the nutty coconut cookies tonight. Must have done something wrong, they are stuck like glue to the cookie sheet. I used parchment paper and lightly coated it with grape seed oil, have to cut them off with a knife which pretty much smashes them. They taste pretty good though. I'm going to try the tea cookies tomorrow, maybe I'll have better luck with them.

    LOLZ!!! I ~totally~ can hear you saying that! Silly, Diane. You must use wax or parchment paper. You cannot place the cookies directly on the sheet. Shame on me if i did not explain this in my recipe. Who's STUPIT Now?

  3. I did use wax paper and greased it with a little grape seed oil. Probably should have skipped the oil. Tried the pancakes today and they were quite good! My Valentine ate 2 (with Aunt Jemima poison on top) and declared them good. Very filling without being heavy, just like you promised. You are the Paleo Master Chef!

  4. Here is the Dinosaur Dropping recipe you requested. They are easy and maybe you will have better luck with them. We all can't be as talented as Jane!

    Ingredients:
    - 1 bar ghirardelli 100% cocoa baking chocolate
    - 1/2 can or 7oz of coconut milk
    - 2 tblspns coconut oil
    - 2 teaspoons vanilla
    - 2 tblspoons egg white powder. I am not entirely sure about the necessity of this ingredient but i used it and it worked so I am keeping it in here.
    - 1/2 cup to 1 cup almond butter. This is where I really failed keeping track. I just spooned it right into the pan.
    - Crushed walnuts (or another nut you would like to use.
    -(Optional) Add in some stevia or sweetener if you need it sweeter. I don’t think it needs additional sweetening at all.

    Directions:
    1. Slowly warm coconut milk in a saucepan on low to medium heat.
    2. Add in almond butter and stir until smooth. Keep pan on low-medium heat.
    3. Add chocolate bar. It will melt easier if you break it into its section. Stir on low-medium heat until smooth.
    4. Add coconut oil and once again stir while keeping mixture on low-medium heat.
    5. Stir in egg white powder and vanilla.
    6. Once all stirred and melted. Remove from heat.
    7. Stir in crushed walnuts (or other nut) and allow mixture to cool enough to handle. You can do this in the freezer or refrigerator to speed it up.
    8. After sufficiently cooled, use your hands to roll the mixture into whatever size fudgeballs you would like.
    9. Cool the fudgeballs in the freezer or refrigerator.
    10. Once cooled and hardened… enjoy! Store in refrigerator.
