Paleo Pancakes

Slept in late today, decided to skip the Marco run. Too darned cold and I'm not doing that again anytime soon. So, I had time to make the Banana Flaxseed pancakes. The recipe was enough for 4 pancakes, and we each had 2. I had mine with a little bit of pure maple syrup, Rich had regular Aunt Jemima. They were very good.

So, breakfast: 2 Paleo pancakes with tiny amount of maple syrup and HB egg, black coffee

Had a bit of a cheat today, a 12 oz nonfat latte. However, I ordered a triple so there wasn't much room for the milk. I was buzzing through the mall.

Dinner: Roasted chicken with a little gravy (made with drippings and thickened with arrowroot flour, non-gluten), broccoli, spaghetti squash (Kary, thanks for reminding me about it, I forgot how much I liked the stuff), and flaxseed focaccia. The focaccia is pretty darned good with a little raw honey on it.

    I tried the coconut chicken but was a bit disappointed. i think i initially had the burner on too high. do yours come out rather dark? how long do you cook them, and at what temp? can you take a photo next time? thanks, D!

  2. p.s. i told you the pancakes were yum. mmm-mmm! did Rich like them? Eric loved them -- wants me to make them again. i know that like me you are a big fan of berries. next time try putting blueberries, raspberries and/or strawberries on top, and some walnuts. WOW! so good.
